Description: Freshly muddled cherries shaken with amaretto, galliano, peach bitters, agave and egg white served short over ice.
Why drink it: Let’s face it, when all we want is a liquid lunch, it makes sense to have a liquid dessert. This fine interpreation of the Bakewell Tart is not only more sophisticated, but it’s less fattening, and it’s unlikely you’ll get jam down your top. For lovers of marzipan (me being one, take note), amaretto is a welcome ingredient. Whilst it may sound sweet, there’s a delicate balance of sour to make it just refreshing enough.
